Christmas Jell-O Salad {Foodie Friday}

Many who know me, know that cooking is another passion I have. I learned this well from my mother, who is practically famous (well not practically, she really is) for her amazing cooking! She even has her own cookbook and her own app!  One of our favorite recipes for the holidays is this fun Pretzel Jell-O salad. Perfect combination of salty and sweet, crunchy and creamy. And so festive looking! I’ve been trying my hand at making some cooking videos for her website and this one was our first!  Give it a try – you’ll love it!

Christmas Jell-O Salad

1 (6oz.) pkg. strawberry jello

1 (10 oz.) pkg. frozen strawberries, thawed and sliced

1 (20 oz.) can crushed pineapple with juice

¾ cup cold water

3 bananas sliced

1 8 oz. pkg cream cheese

1/4 cup milk

In a 9 x 13 Pyrex dish, dissolve jello with 2 cups boiling water.  Add strawberries, pineapple and cold water.  Refrigerate until partially set; add bananas.  Chill until set firm.  Blend cream cheese and up to ½ milk together until smooth.  Spread on top of set jello.  Sprinkle topping over cream cheese.

Topping: 

1 cup flour

½ cup butter

¼ cup brown sugar

1 cup chopped pecans

Combine all ingredients with pastry cutter.  Bake at 400 degrees in shallow pan for 10 minutes, stirring every few minutes until lightly browned.  Cool.  Sprinkle over jello and cream cheese.  Serves 15.
