Foodie Friday {Orange Cream Chip Cookies}

Here’s another favorite family recipe that has been enjoyed by many of our family and friends….and shower goers!  These photos were taken quickly and not in the best light as I was making and bringing these cookies to a baby shower I was throwing of a sweet friend whose sweet newborn session I can’t wait to show you!  Anyways, don’t let the poor lighting or snapshot quality of the images and styling deter you from trying these little gems…and getting tons of raves for a very fancy seeming little cookie!

Orange Cream Chip Cookies

  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 3 oz. pkg. cream cheese
  • 2 eggs
  • 2 tsp. fresh squeezed orange juice
  • 1-2 tsp. grated orange zest
  • 1 c. sugar
  • 2 1/4 c. flour
  • 1/2 tsp. salt
  • 1 (6. oz) pkg. semi-sweet chocolate chip pieces

Preheat oven to 350. Lightly grease cookie sheets (or better yet, line with parchment paper). Sift together flour and salt. Beat together shortening, butter, sugar and cream cheese in bowl until mixed.  Beat in eggs, one at a time.  Add orange juice and orange zest. Blend in flour mixture. Stir in chocolate pieces. Drop by rounded spoonfuls, 2 inches apart on prepared baking sheets. Bake at 350 for 12 minutes or until lightly browned around the edges. Cool on racks. Spread tops with orange icing. Garnish, if desired, with thin strips of orange rind. Serves 24.

 

Orange Cream Icing

  • 2 c. powdered sugar
  • 1 (3. oz ) pkg. cream cheese, softened
  • 1 tsp. orange juice
  • 1-2 tsp. orange zest

Gradually beat sifted powdered sugar into softened cream cheese until well blended. Stir in orange juice and orange rind. Frost tops of cooled Orange Cream Chip cookies.

Notes: These are very special cookies!
